Vinification The previously thinned grapes are harvested slightly
dried in arder to guarantee an adequate potential alcohol
content. The grapes are fermented with indigenous yeasts with
repeated punching down to ensure excellent extraction of
polyphenolic substances. When we reach the halfway point of
the alcoholic fermentation, the product is drawn off and fortified
in arder to block the activity of the yeasts.
Maturing Maturation takes piace in third passage French oak
barriques far at least 18 months
Bottle Ageing The minimum refinement is 12 months. The wine
expresses its best after a few years.
Colour The color is intense ruby red tending to garnet with the
passing of the years
Bouquet The aromas remind us of ripe red fruit, plums and berries.
